Beef Processing

Rib-eye steak    

12-14 per side of beef cut at 3/4-1 in. thick

Round steak    

8-9 per side of beef cut at 3/4-1 in. thick

Minute steak    

can be made from all or part of the round

Sirloin steak    

6-8 per side of beef cut at 3/4-1 in. thick

T-Bone steak    

12-14 per side of beef cut at 3/4-1 in. thick

Roasts

2-3 rump roasts per side of beef

2-3 arm roasts per side of beef

10-12 chuck roasts or can be made into chuck steak

Ground beef

Amount will vary, depending on how you have your meat is processed.
Average is about 25% of the carcass weight.  We also make ground beef patties.

Boiling beef

made from the brisket, or can be boned out for ground beef

Soup bones

made from neck or shank bones, or can be boned out for ground beef

Back ribs
Short ribs

if not used as ribs they can be boned out for ground beef

Cubed stew meat   

can be made from trimmings, round or can be ground beef

Liver

usually 6 packages per side of beef
